When any icecream has to be made most important is making basic recipes from which different ice-creams can be made . One is basic icecream and other is chocolate basic ice-cream. Today I will tell you all about how to make basic icecream and varitey of icecreams from the same.basic ice-cream can be made & kept for about 20 days.
Churner: You get electric churner of different companies in market costing from Rs. 1500/ to Rs.2000/. These churners are usefull for making cakes also. It is worth investing in one.
BASIC ICE-CREAM
Ingredients for one recipe of basic ice-cream
Milk(whole) ½ liter
C.M.C. powder 1/8 tsp
Milk powder 3 ½ tbsp
Sugar 6 tbsp
G.M.S. powder 1 ½ tbsp
Liquid glucose 1 tsp
1) Boil ½ liter whole milk. Remove ½ cup milk from it cool it slightly and
2) Add to it milk powder, G.M.S., C.M.C, sugar and mix well.
3) Then add the rest of the milk to this mixture.
4) Now add liquid glucose and boil the mixture for 6-7 minutes.
5) Pass the mixture through a sieve. Cool it stirring constantly.
6) Pour this mixture in a container, cover with a tight lid and keep to set in freezer.
7) When this mixture setsafter about 10 hours the basic ice cream is ready.
VANILLA ICE-CREAM
Basic ice- cream One recipe
Vanilla essence 1 tsp
Cut basic ice cream into small pieces and put it in a vessel.
Add vanilla essence and churn it till soft and fluffy.
Pour it in a container and cover with a tight lid.
Keep for setting in freezer for 8 hours.
When set vanilla ice cream is ready.
Other varieties of vanilla ice-cream
1. Vanilla with chocolate chips
Chocolate chips ½ cups
When the basic is churned pour in a container, mix lightly the chips, cover again and set
2. Vanilla with Chocolate Sauce
Sugar ½ cup
Cocoa powder 2 tbsp
Water ¼ cup
Vanilla essence ¼ tsp.
Take together all the ingredients in a saucepan. Boil for about 2 minutes.
Serve this hot or cold on vanilla ice cream.
PISTA ICE-CREAM
Green colour ¼ tsp
Pista essence ½ tsp
Roasted pista pieces ½ cup
Cut the basic ice cream into small pieces.
Add cream, essence, colour and churn till soft and fluffy.
Pour in a container. Mix pista pieces lightly.
Cover with a tight lid and keep to set in freezer for 8 hours.
BUTTER SCOTCH ICE-CREAM
Basic ice –cream One receipe
Lemon yellow colour ¼ tsp
Walnuts (fried) ½ cup
Butter scotch essence ½ tsp
Sugar 5 tbsp
Heat sugar in a pan.
When melted add pieces of walnuts, mix well and transfer on a greased surface immediately.
When cool crush to a coarse powder and keep aside.
Cut the basic ice cream into small pieces.
Add essence, colour and churn till soft and fluffy.
Add crushed walnuts and churn well.
Pour in a container, Cover with a tight lid and keep to set in freezer for 8 hours.
COFFEE ICE-CREAM
Pour it in a container and cover with a tight lid.
Keep for setting in freezer for 8 hours.
When set coffee ice cream is ready.
DATE AND WALNUT ICE-CREAM
Basic ice-cream One recipe
Black dates 1cup
Roasted Walnuts 1/2 cup
Cut basic ice cream into small pieces and put it in a vessel.
churn it till soft and fluffy.
Churn dates Pour it in a container Add walnuts to churned ice cream in the container.
Cover with a tight lid.Keep for setting in freezer for 8 hours.
CHICKOO ICE-CREAM
Basic ice –cream One receipe
Chickoo pulp 1 cup
To Make Pulp ( For 1 basic)
Chopped fruit- 1 cup(heaped)
Sugar - 1-3 tbsp(depending on sweetness of fruit)
Mix well the fruit pieces and sugar.
cook for 2-3 minutes mashing lightly.
Cut the basic ice cream into small pieces and put it in a vessel.
Churn it till soft and fluffy.
Add chickoo pulp and churn for a minute.
Pour it in a container and cover with a tight lid. Keep for setting in freezer.
