Receipe for healthy chinese food

I love to eat chinese, generally we used to go out have soups, manchurian, schzewan dishes we dont even know what ingredient are used. We have soup thinking we are having healthy food but many a times it has maida and colours which is very harmful to our body. For taste in most of the chinese food they put ajinomoto which is very harmful to our body.
Once I realised what harm it is causing to me & my family I learned how to make it at home a much healthy version. I am sure readers will enjoy making it.
Hot And Sour Soup
Ingredients
Carrot 1 tbsp Red chilly minced 1tsp
Paneer 1 tbsp Salt/Pepper/Sugar to taste (seasoning)
Beansprout 1 tbsp Vinegar or lemon 1 1/2 tbsp ( I use lemon better for health)
Mushroom 1tbsp Spring onion greens
Celery stalk 1 tsp ( for aroma) Soya sauce
Veg stock 6 cups Cornflour make into paste with water

Shred all vegetables into julliens. Boil the veg stock, add the vegetables, red chilly minced , seasonings, vinegar/lemon, soya sauce and some spring onions green. Then addcornflour paste slowly stirring continuously ( else cournflour will be converted into lumps) . Let simmer for 1-2 minutes, serve hot garnished with spring onion greens and fried noodles.
Tips:
Juliens: Cut vegetables in thin srips lenghtwise
Veg Stock preparation: take vegetable remains boil them then put celery stem Pressure cook all vegetable for one wistle then cook for 15-20 minutes on slow gas. Once cool smash the vegetables then sieve to get veg stock
Fried noodles: Take thick round noodles. Put them in boiling water for 2 minutes. Sieve the water, apply a spoonfull of oil to these noodles Let it cool for sometime then before frying apply little cornflour. Fry in any oil.
Red chilli minced: Generally if you have green chilli which is turned into red use that or use green chilli
